This is Christopher Kimble. You’re listening to America’s Test Kitchen. Robb Walsh is author of “Barbecue Crossroads” and he embarked on a road trip from Houston to the Carolinas to connect the dots between beef and pigs, the barbecue of Texas to its origins back East.

The reason I wanted to write “Barbecue Crossroads” is because I wanted to connect the culture of barbecue in Texas with the culture of barbecue across the the South and then see if I could find an elemental definition of barbecue.

The brisket burnt ends, however, were spectacular, and I realized the charm of it all: great food in everyday places. That’s the essence of barbecue.
